Recipe: Roasted Garlic Vinaigrette


This dressing is a snap to make, and uses ingredients that most people have in the house all the time.
If you have no apple cider vinegar, feel free to use what you have, it will change the flavour slightly.

The dressing tastes amazing on any salad greens of your choice, and combines well with blue cheese, goat cheese and even fresh fruit like peaches or oranges.

Have leftovers?  Use it as a  marinade for chicken breasts, throw them on the grill, and you have an easy dinner solution.




 ROASTED GARLIC VINAIGRETTE


10 LARGE GARLIC CLOVES
6 TABLESPOONS OLIVE OIL

2 TABLESPOONS HONEY
2 TABLESPOONS APPLE CIDER VINEGAR
2 TABLESPOONS APPLE JUICE
2 TABLESPOONS MUSTARD


  • HEAT THE OVEN TO 350F. WRAP THE GARLIC AND OLIVE OIL IN FOIL AND BAKE UNTIL THE GARLIC IS TENDER. COOL. PEEL.
  • COMBINE THE GARLIC, OIL AND REMAINING INGREDIENTS IN A BLENDER AND BLEND. SEASON TO TASTE WITH SALT AND PEPPER.
